Jamie Wirth Invents A Delicious Cocktail For Us

The man behind The Norfolk, Abercrombie, Carrington and Flinders makes us a Friday evening drink.

Jamie Wirth and James Miller might be the two most popular guys in Sydney. Even if you don’t know and love them personally, chances are you’re a regular in one of their many refurbished and popular drinking holes. We’re talking The Carrington, The Abercrombie and The Norfolk, not to mention The Flinders.

The guys have found a winning combination in their renovations of old pubs back to their former glory. By pulling out the pokies, adding a delicious menu, and creating some powerful and ironic beverages (at least we think ‘lageritas’ are ironic), the boys have at once revitalised Sydney’s drinking culture and provided a home for many a thirsty hipster.

So who better to make us a drink on a Friday afternoon? We gave Mr. Wirth free reign to create us something yum. The only condition was that it had to include Ardbeg malt whiskey. Why you ask? It’s Ardbeg Day on Saturday! (Cue party hat.) Ardbeg Day has been celebrated for years in the distillery’s spiritual home, the isle of Islay, Scotland. This year, Australia is getting in on the act by hosting its first Islay-limpics at the North Sydney Olympic Swimming Pool and Aqua Dining. We hear it involves some traditional highland sporting activities. Like drinking! Jks.

So check out the finished product: the Idiot’s Delight.

Ingredients:
Montenegro
Peach Bitters
Lemon
Ardbeg (pronounced “Arrrr-dbeg”).

Thanks Jamie!
